I can hardly believe that Christmas is over and 2012 is almost here!
Since I like to think of my blog as a little online journal for myself,
I thought I’d share a little bit of the Christmas pictures I took this
year.
Our holiday decor. I kept the wrapping very
simple this year with just some kraft paper and fun ribbon. I made all
the bows myself and the ribbons were all purchased from JoAnn Craft store.
The red tree and the plant were found at a boutique flower shop last
year. I love pulling out our holiday decor but some of it was so buried
in our storage that I couldn’t get to it and had to order a bunch of
new decorations! (Cleaning that storage is top of my new year’s goals!)
My
husband was very thoughtful and spotted these roses for me and I loved that it went with our holiday decor.
I also keep a little space just for my “girly” holiday decorations. 🙂
Just
some of the goodies that I made. I had never had homemade chex mix
before but decided to make it and YUM! So addicting. I put a bowl out
and in an instant it was gone. I made chex mix 3 mornings in a row!
And white chocolate covered pretzels are so delicious!
The cutie tins that I put the treats in. They were perfect for gift giving!
I
just had to include this picture of me and my super adorable nephew in
the sweater we got him. We love H&M kids where we bought him this
sweater. He just looked so darn cute in his little winter sweater and I
was wearing a cozy winter sweater too so I had to get a photo with
him! 🙂
You all know that I love baking and I’m preparing for a full on baking day tomorrow as I’m preparing to make white chocolate bark and cookies to give as gifts and to bring to both of the Christmas celebrations we will be celebrating with my family and my in laws. (I’m also thinking about making chex mix and muddy buddy mix if I have enough time!) Before I start all that, I thought I’d share my recipe for a Lemon Pound Cake that I made about a month ago that is to die for and would be a good treat to have on Christmas morning! While I typically do not believe in substituting “healthy” stuff for stuff that’s supposed to be indulgent (like you will never convince me that “cauliflower mashed potatoes” is as good as the real thing. I believe in indulging in what you love, just control how much of it you eat), my one exception is butter. I don’t like butter. Yes, I love to bake but I don’t like butter. I don’t like the taste of it so I always am trying to cut down on how much butter I use when I bake. I understand that most of the time that you can’t taste the butter and that it just adds to the texture of the baked good, however, in my mind, I still dislike butter so I just try to use as little of it as possible. I’ve found that yogurt does a great job in replacing butter which is what I did with this Lemon Pound cake and it tastes amazing. My husband (who does love butter) can never tell when I substitute yogurt for butter and he enjoys this lemon pound cake so much that I had to make another loaf just to freeze and eat it for later. I cut the butter in half for this recipe as well as used non-fat milk (that’s not an on purpose substitute, that’s the only kind of milk I drink.) but feel free to use low fat or whatever kind of milk you like. The pound cake still had a wonderful heft to it like pound cake normally does but it also had a light and buttery texture, even without all of the “regular” ingredients. I also made a lemon glaze and oh man it was yummy!
While I wouldn’t count this as healthy or anything, if you are trying to reduce the amount of butter in your diet or you are like me and don’t like butter, this is a great recipe to try, especially when you are in the mood for something lemon-y!
Lemon Pound Cake (light!)
Adapted from: allrecipes.com
2 cups all-purpose flour
2 teaspoons baking powder
1 1/4 cup white sugar
1 teaspoon salt
1/4 cup butter
1/4 cup plain yogurt (you can use Greek yogurt too)
1 egg
~1 cup non-fat milk (when mixed with egg)
1 teaspoon vanilla extract
3 tbsp lemon juice
1 lemon, zested
Glaze
2 cups of sifted powdered sugar and
1/3 cup lemon juice
1. Preheat oven to 350 degrees F. Grease a 9×5 loaf pan.
2. In a large bowl, mix flour, baking powder, and salt.
3. In another bowl (or in your stand mixer), cream together butter, yogurt, and sugar. Break 1 egg into a measuring cup and then fill to the 1 cup line with milk. Add to butter/sugar mixture and beat well. Add vanilla, lemon juice and zest. Add dry mixture and mix well.
4. Pour batter into the loaf pan. Bake for 40 minutes or until a toothpick inserted into the center of cake comes out clean.
For the glaze: mix together powdered sugar and lemon juice until desired consistency. Let cake cool completely before pouring glaze over cake.

I’m a spontaneous baker. My husband calls me the “midnight baker” because that’s usually about the time that I like to start baking. I know, weirdo 🙂 I don’t ever plan on what to bake, I usually just look what I have in the kitchen and bake with what I have. This day, however, I was at Whole Foods and these blueberries were looking so yummy so I grabbed them and walked towards the lemons which looked equally as good and decided right then that I need to bake a Lemon Blueberry something. I usually like to make lemon bars when the lemons are looking as good as these but this time I felt like cake and searched Food Gawker for the perfect recipe which I found on Kitchen Runway. It just looked delicious and crumb topping gets me everytime! (I skipped the glaze because I didn’t want the extra sweetness)
Definitely a winner! And perfect with a cup of coffee. I’ve bookmarked this one to make another time.

Just a quick recap of our trip to Jamaica. If you haven’t been, I highly recommend it and if you go stay in Negril on the cliffs. For hotel recommendations, I love Tensing Pen, obviously as it’s where I got married at, but also Rockhouse and Catcha Falling Star are all nearby and great resorts too. The cliffs are a pretty amazing place, it’s like no other tropical destination – check out my wedding pics for a good example of the cliffs! We stayed a bit more inland near the beach this time (the cliffs = no beach but amazing views and sunsets) and we enjoyed it but I would rather return to the cliffs next time. I went a totally different route and booked us a private villa at Moondance Villas that included our own personal butler, bartender and chef! We were in the Lilac Mist villa and we really enjoyed it. It was so awesome to have all of our meals served in our own little dining area and each morning we’d tell our chef whatever we wanted to eat that day and then they’d serve it to us whenever we wanted. I felt so spoiled! (if you are thinking about booking it, we did opt for the All Inclusive package which was well worth it. No buffets, all freshly prepared meals here!)
Top photo: Our private dining area in the back
Bottom photo: The bedroom, they made the bed differently every day! And no, you don’t really need to use the mosquito nets since there is AC in the villa. More for decor I guess. Off of this was a huge bathroom and then there was a living room/dining room space on the other side of the villa.

They left these flowers around our villa every day and I got a shot of them together before they spread them out.
Not the cutest outfit but whateves, I was laying by the beach the whole day! 🙂 Top by Marc by Marc Jacobs, shorts by J Crew, sandals by Tory Burch

Ah, the beach… I wouldn’t mind being back there right now!
We took my mom out for mother’s day to her favorite brunch place, Lola, in downtown Seattle. I get a lot of questions about where to eat when visiting Seattle and although I have a million recommendations I can say that any of the Tom Douglas restaurants are a safe and super yummy bet. I’ve eaten at all of them and have no complaints. We had a fabulous brunch and then Pike Place was having a flower festival so we walked down there to check it out and to get my mom some flowers. I mentioned before that Pike Place Market gets super crowded but I was pleasantly surprised to see that they blocked the cars from entering Pike Place which in turn helped the usual crowding out SO much because it gave people so much more room to walk in. It was really nice walking through the market and not dealing with pushing through the crowds and cars. I don’t know if it was special for the flower festival but I wish they’d close the street to cars all the time so that the market is much more fun to walk through! Anyway, it was such a great day hanging out with my family and was so happy to take my mom out for a fun mother’s day!

My sister flew in from Chicago to surprise my mom and surprised she was! We don’t get to see my sister as often since she lived in NYC for awhile and now Chicago so it’s always great to have her home. The nice diners next to us offered to take our picture which was nice because most people are intimidated by our huge camera so usually my husband and I are not in the photo since we are the photographers! My fabulous family minus my brother and brother in law who couldn’t make it. I <3 family time and am so happy that my parents live close by enough to see them often!
Happy Mother’s Day to my amazing mom who I get all my style from! I learned from the best! 🙂
Just had to post a few pictures of what the hubs surprised me on Valentine’s Day with as it was just so sweet. Yes, I do tell him not to get me flowers on V-Day but he still does (and I don’t deny it, I love it). But the best surprise of all? A gigantic apothecary jar of my favorite candy in the whole wide world!! I told you I cut out candy out of my diet, but I had to make an exception to gummy cinnamon hearts as they only come around once a year and they seriously are the best candy ever! (And I totally ate a whole bunch before I took these pictures.) I’ve also been wanting to add an apothecary jar or two to our decor and I love this one that he bought. The daisies are a tradition, every time he buys me flowers he buys me daisies too. I just love the color of them. Oh and if you are wondering, I did the flower arrangements myself. Hubs is great at buying me flowers but leaves me to arrange them 🙂 You can see the flowers he got me last year on this post (scroll to the bottom).
I didn’t capture the little jar on the left but those are valentine’s treats for our doggies! Aww, hubs is so great, he thinks of everyone in the family 🙂
Have a fabulous weekend everyone! I’m hoping for a stress-free relaxing weekend. Crossing my fingers that I will get it!
